Sugar Cookies
Wet:
1 cup butter (margarine), softened.
1½ cups confectioners sugar, sifted.
1 egg.
1 tsp. vanilla extract.
½ tsp. almond extract.
Dry:
2½ cups all-purpose flour.
1 tsp. baking soda.
1 tsp. cream of tartar.
granulated sugar. (topping)
colored sugar sprinkles (red, green, chocolate, etc.). (topping)
- Mix thoroughly butter, confectioner's sugar, egg, vanilla, and almond extract.
- Combine flour, baking soda, and cream of tartar in a separate bowl and whisk slightly to incorporate. Blend into butter mixture.
- Once blended, place in a bowl and cover with saran wrap. Chill overnight in a refrigerator.
- Heat oven to 375°F.
- Divide dough in half. Roll each half 3/16 inch in thickness on a lightly floured rolling cloth. Cut into desired shapes with cookies cutters. Place on ungreased baking sheet. Sprinkle with granulated sugar (to taste) and various decorations. Bake 6-8 minutes or until lightly brown on the edge.
- Makes about five dozen 2-3 inch cookies.
Apple Cake
Set aside mixture:
6 thinly sliced apples (Galas are good; they're not as juicy as other apples).
½ cup sugar.
3 tsp. cinnamon.
Mix together:
3 cups unsifted flour.
2¼ cups sugar.
1 cup cooking oil (or 1 cup of apple sauce instead).
4 eggs (or egg beaters equivalent).
½ tsp. salt.
1/3 cup of orange juice.
2½ tsp. vanilla.
3 tsp. baking powder.
- In greased and floured tube or bundt pan, arrange the batter and apple mixture in layers, beginning with a batter layer and ending with apples on top.
- Make 3 layers of each.
- Bake in bundt pan at 350°F for 2 hrs.
- If using a tube pan, bake at 325°F for 1 hr. 35 min.
Award Winning Cheesecake

This recipe originally appeared in a Baltimore, Maryland area newspaper, and I can't take credit for it.
Crust:
2 cups freshly crushed graham cracker crumbs.
½ cup sugar.
½ cup melted margarine.
Bottom Layer:
3 8-ounce packages cream cheese, softened to room temperature.
(don't microwave the cream cheese)
3 eggs.
1 cup sugar.
1½ teaspoons vanilla extract.
Top Layer:
1½ cups sour cream.
3 tablespoons sugar.
1½ teaspoons vanilla extract.
- Mix crust ingredients together. Press into bottom and sides of a 10-inch round deep dish glass pan (make the bottom of the crust a little thicker than the sides).
- Beat together ingredients for bottom layer, pour into crust.
- Bake in pre-heated 375°F oven 20 to 25 minutes. Remove and cool on wire rack 15 minutes.
- Stir together ingredients for top layer. Spread over cooled cake. Depending on the depth of your pan, not all of the top layer may fit.
- Return to 425°F oven and bake 10 to 12 minutes.
- Refrigerate until serving.
